This dish consists of rice cakes served with vegetables, shredded chicken, lawar (a mix of vegetables, coconut, and spices), fried peanuts, and a thick spiced broth. What makes blayag unique is its use of a yellow coconut curry sauce that is both savory and slightly spicy, setting it apart from the more common rice cake dishes. The wrapping is also special, as the rice cakes are bound in banana leaves and tied with bamboo strings, creating a fragrant aroma when served. Blayag Mek Sambru was first created by Ni Wayan Sambru, a woman from Karangasem who has been selling blayag for decades. From her name came the title “Blayag Mek Sambru.” The dish is enjoyed not only by locals but also by tourists who purposely travel to Karangasem just to taste it. Sambru’s perseverance in maintaining quality and flavor has kept this dish alive until today. Moreover, her family successors have also continued the effort to preserve this culinary heritage so it will never fade with time.

Blayag Mek Sambru can be found in Karangasem Regency, particularly around Karangasem town, the heart of East Bali’s community life. The small eatery of Mek Sambru, though modest, is always crowded with visitors in the mornings and afternoons. While it is far from a luxurious restaurant, it has become a magnet for traditional food lovers. Over time, its distinctive flavor made the name Mek Sambru beloved by the people of Karangasem. Today, despite modern changes, blayag remains a favorite dish among locals. It is commonly eaten in the morning as breakfast or at midday as a filling meal. Many people from outside the region even come early just to ensure they get a portion, as Blayag Mek Sambru often sells out before noon.

The process of preparing Blayag Mek Sambru requires patience and precision, as all spices are made in the traditional way. First, the rice cakes are wrapped in banana leaves and boiled until perfectly cooked. Then, the broth is made from a mixture of turmeric, shallots, garlic, galangal, candlenuts, chilies, and other Balinese spices, which are ground and then sautéed until fragrant. The spices are cooked in thick coconut milk, resulting in a golden yellow sauce that is rich and savory. Complementary toppings such as shredded chicken, boiled vegetables, fried peanuts, and lawar enhance the dish’s flavor.
